Cashew Key Lime Pie Bites
If there’s one type of dessert I don’t think I could ever grow sick of, it’s anything lime or lemon-y! There’s just something so refreshing about it and it immediately reminds me of Summer.
With the recent relaunch of Made With Local’s Granola Bar Mix, I was dreaming up something delicious I could make. Sure, I could whip up a batch of their Real Food Bars using the Granola Bar Mix, but I wanted to take it one step further – and well, these Cashew Key Lime Pie Bites were born!
The amazing thing about the Granola Bar Mix is that you can make just about anything – granola bars, energy balls or you can even use it like a pie crust like I did. You can choose to bake it or kick it no-bake style (highly recommend in these hotter temperature time).
Also, you can choose what kind of sweetener or nut butter you want to use, be it a nut or seed butter (seed butter is great for school environments, for when we get back to those times post-pandemic) and switching up your sweetener is great if you have a certain liking towards one, be it maple syrup, honey, brown rice syrup or date syrup. I used tahini (sesame seed butter) and raw honey for this recipe because the combo of both is just pure deliciousness.

Cashew Key Lime Pie Bites
Cashew Key Lime Filling Ingredients:
1 cup raw cashews, soaked in hot water for 4 hours
1/3 cup + 1 tbsp freshly squeezed lime juice
1/3 cup liquid coconut oil
1/4 cup maple syrup
2 tsp matcha (for colour)
1 tsp vanilla
Shredded coconut and lime zest for garnish (optional)
Crust Ingredients:
1/2 cup tahini
1/2 cup honey
Directions:
Add all Cashew Key Lime Filling ingredients to a food processor or a high-speed blender. Pulse for 45-60 seconds or until smooth.
In a separate bowl, combine crust ingredients and mix with spoon or hands.
Transfer Crust ingredients to a glass dish and pat down with heads until flat.
Pour Cashew Key Lime Filling over crust and smooth out so it’s even.
Garnish with shredded unsweetened coconut flakes and transfer to freezer (make sure it’s on a flat surface) and freeze for at least 6 hours.
Cut into squares and garnish with lime zest when ready to enjoy!
