Corn and Lentil Salsa
Not gonna lie, I was THIIIIIS close to calling this "Poop-Happy Salsa". That's because the day after I had it this past weekend, my poops were on FIRE (I mean that in the best way possible). So if you could use some support in that area, trust that you've come to the right place.
I tried this salsa at a family BBQ this past weekend and I couldn't believe how simple and delicious it was. Even the kiddos at the BBQ were gobbling it up (you listening, mamas and papas out there?). I had our family friend send it to me which was sent in the form of a picture of an email that contained the recipe. I loved how old school that was. Nobody sends recipes (or emails) like that anymore, do they? I dare you to do something crazy and send an email to someone just to say hi. No call to action or request needed. Or hey, send them this recipe!
I made a few tweaks to the recipe, but not many because it was almost perfect just as it was! The lentils bring such a nice texture to the salsa and with all of that fibre and protein, it acts as an appetizer that will actually satisfy you and tide you over until dinner. I had it for lunch today with my favourite non-GMO corn tortilla chips but it could easily act as a mixed salad too if you want to fork and knife it (well, spoon it).
If you want to stretch on those Summer feels just a wee bit longer, this Corn and Lentil Salsa totally fits the bill!
Corn and Lentil Salsa
Ingredients
1 bag of non-GMO corn tortilla chips
1 can green lentils
16 basil leaves (a good handful), thinly sliced
4 green onions, thinly sliced
3 tomatoes, diced
1.5 cups corn
Dressing
Juice of 1 small lemon
1/3 cup avocado oil (you can use olive but it will effect the taste)
2 garlic cloves, minced
salt and pepper to taste
Directions
Prepare all ingredients, except tortilla chips and dressing, as listed and place into a bowl.
In a separate bowl, combine the dressing ingredients and pour over salsa.
If there is too much liquid at the bottom, you can put a plate over the bowl to strain it.
Serve with tortilla chips or enjoy on its own!
