Salad Samurai-Inspired BBQ Chickpeas

I suppose you can tell by the name I was inspired to make these Smokehouse Chickpeas from the Salad Samurai cookbook, with a few twists to "Rachify" it. If you're not a chickpea lover, this recipe is bound to seal the deal.

It's tasty, packed with fibre (hey, healthy poops!) and with the combination of protein (which can be found in chickpeas), you can rely on these BBQ Chickpeas as a healthy, filling and yummy lunch!

The BBQ flavour offers the perfect combination of sweet and savoury. I can almost guarantee you've never had chickpeas that are this exciting before (I definitely hadn't until I landed on these!).

Salad Samurai-Inspired BBQ Chickpeas

Ingredients

  • 1 can chickpeas (540ml)

  • 2 tbsp tomato paste

  • 2 tbsp tamari

  • 2 tbsp nutritional yeast

  • 1.5 tbsp pure maple syrup

  • 1 tbsp dijon mustard

  • 1 tbsp avocado or grapeseed oil

Directions

  1. Prepare a frying pan on medium-high heat and drizzle with avocado or grapeseed oil (or your preferred high heat-stable oil)

  2. Open can of chickpeas, rinse under water and strain. Transfer to frying pan (once hot) and toss for 3-5 minutes

  3. In a separate bowl, combine sauce ingredients

  4. Bring heat down to low-medium and toss chickpeas with sauce, ensuring all chickpeas are covered

  5. Once covered, remove from heat and transfer to a glass dish

  6. Let cool before storing in the fridge

  7. Enjoy on top of rice, quinoa, salads or Buddha Bowls!
